View Full Version : Leftover Night - What Do You Have?

Well tonight was our beloved leftover night here. It was so quick and easy and tasted so yummy!

I took the Enchilda Bake (which already had the cheese in it) and placed it on the plate, then added a bit of light sour cream and bagged dry Broccoli Slaw on top to add some crunch/veggies. We also had some leftover Baked Beans, Parmesan Crusted Chicken, and Peas/Corn mix.

I was happy that we got our veggies, protein, grains, and dairy all in one meal. All we were missing out on was the fruit.

So what about everyone else? What do you eat on leftover night?

The wife made some delicious stir fry last night, she mad a linguini on the side for herself, but for me it was chicken, baby corns, broccoli, water chestnuts, bean sprouts and I think bamboo shoots...I have no idea what the last thing was. Flat and chewy like a broccoli stem. Anyway..it was excellent and I will be eating the leftover tonight.

There's never leftovers in this house. My kids love their meat and 3 veg so many of our meals are like that, and you cook what you need kind of thing. When we have pasta or a stirfry and there's leftovers I parcel it up into lunches for Doug to take to work and Eliza to daycare or if its only a small amount I'll have it for lunch the next day.

When I make casseroles in the slowcooker I always make double or triple and freeze a couple of meals.

Tonight is leftover stuffed peppers.
Green peppers from my garden stuffed with brown rice, browned ground turkey, chopped sweet bananna peppers, chopped onion, and covered in tomato puree... baked until the peppers are tender.

We usually do leftovers one day a week. I make extra at most meals to pack for lunches the following day for me and the wife. My daughter is in Kindergarten, so her lunch is not a reheatable item like ours, so I usually make her a sandwich, or the like.

Yes, I pack the lunches everyday. Does that make me a girly-man? lol

We don't usually have leftover night - unless it's the occasional left over take away pizza, curry or chinese food! Mostly our leftovers end up as lunches the next day, or as frozen dinners.
