I've recently rediscovered just how very tasty squash is. My husband baked some acorn and butternut squashes up yesterday, and they honestly tasted like candy. I believe he added a very small amount of butter and brown sugar, and it was absolutely divine.
With fall quickly coming upon us, I'm trying to take advantage of all of the many squashes that nature has to offer.
My mom makes spaghetti squash with a dab of butter, and that sends my taste buds spinning. She also uses yellow squash and zuccini squash in the summertime in a foil packet on the grill.
My dad grows buttercup squashes as well, and those are just as tasty as the butternut. Very good baked in the oven.
We bake a lot of squash in the late summer/fall, then freeze most of it so that we'll have it during the wintertime.
If anyone has any good squash recipies, feel free to share. It's one of my favorite veggies!

Yummy.
I like sweet potato with a dab of "I can't believe it's not butter" a bit of cinnamon, and a bit of sugar-free maple syrup or Brown sugar SugarTwin.
Baked in a caserole until tender, then ladle the sweet syrup over the top... yummy, and good for ya! You could do this with squash!
I like fresh zuccinni and tomatoes sauteed in olive oil and garlic, with a couple hot bananna peppers thrown in. Ladle this over bread or pasta, or just eat with a spoon.

Oh yeah! Maple syrup is pure heaven to use in place of sugar/brown sugar/honey. I looooooooovvvvvvvve maple syrup. And I love sweet potatoes too! They are so much healthier than their white counterparts, and taste better IMHO too!

I love squash soup! You can even drizzle a bit of maple syrup on the top of it.

Actually squash is a GREAT starch that can be substituted for potatoes. mashed white potatoes are REALLY high in carbs, and offer no nutrients or vitamins. But squash and sweet potatoes are lower in carbs, and are packed with vitamins! you can eat it hot or cold, candied or creamed, mashed, whipped, chopped or chunked. I love squash. (not squarsh)

I love zucchini and carrot rings lightly steamed together in the microwave.
Zucchini rings or sliced yellow squash (the little ones) go great with a steamed julienne of other veggies in the microwave. Blanch broccoli, cauliflower and carrots seperately for 30 seconds to a minute in the microwave first. Combine with squash, sliced snow peas, sliced beans etc, then nuke for 6 minutes.
Pumpkin soup is best made with butternuts - just add a couple of onions and potatoes to a couple of butternuts, a couple of cups of chicken or veggie stock, and just enough water to cover the lot. Add a bit of curry powder for a kick, or some nutmeg for a different flavour if you like. boil it up, blend it and serve with a dollop of natural yoghurt or sour cream in top.
I also love baked pumpkin - usually spray it with a bit of oil and sprinkle with nutmeg or Tuscan style herbs (a MasterFoods premix of rosemary, garlic, parsley, rosemary, salt). We usually bake it with chunks of other veggies - potato, sweet potato, carrot, parsnip, onion etc - for a really yummy roast treat.
My hubby makes butternut squash casserole --to die for. Tastes like Pumpkin Pie without the crust...omg *drooling now*.
