I'm not going to be able to make it on Oct. 14th after all. My mom has me driving her to TN to visit my younger brother and nephew that weekend. I'll be out of town the entire next week, through the weekend of Oct. 21st.

I'm going to miss you all! Maybe we can swing a dinner or lunch during the week in between?

No Karen, but me, Kim, Dianne, and who else?

Have a good lunch.

I'm scheduled for an 8am spinal injection this morning so I will not be able to make it. I'm still having a heck of a time with my back.

Now, get this, the pain is zapping into my muscles in my legs down to my toes, like little hot spots or something. I need to speak with my dr about this. I have 3 years worth of history now.

Plus, I made an appointment for a chiropractor and was'nt able to go until payday. I"ll have to put that out a few weeks.

ENjoy your lunch for me. I'll be at the T Castle recovering from my shot.

the white chicken chili....it is awesome. you could mash up any big chunks but it is really soft. They also have french onion soup lite (which is without the bread) Of course there is always cheesecake, but it is rather counter productive. LOL

mmmm ox tail soup.
Ok for the serious answer on horse butt,
"I am soo deeply offended that anyone would eat horses, that i love, anything that i think tastes nasty would taste like a horse, cause, to eat a horse, would cause me to forcefully expell my stomach contents"

The real answer.. that chili was soooooooooo nasty, I wanted to say tasted like horse S#!T, but, I knew I would get the question... "how do you know?"

One 6qt crock pot FULL of white chicken chili horse $#!T is what it was.
:)
When its my time of month... i get reallly stupid sarcastic.
No one should talk to me..

Hey...

I've got some great chilli recipes that are really healthy.

Here are some recommendations for your regular chilli recipes to make them healthier...

Use 1/2 low sodium vegetable broth in place of some of the tomato sauce you use. Adds lots of flavor and vitamins.

Use ground turkey in place of beef. Don't get those premade rolls of ground turkey in the frozen section. Get some turkey breast and have it ground, or do it at home in the food processor. You can also chop it up corsely (in small pieces) and use it that way.

Beef heart, ground, is extremely healthy. In fact, the heart meat is one of the healthiest parts of the cow... all the benefits of organ meat, without the cholesterol, and muscle meat, without the fat. If you can get it from your butcher, highly recommended. Don't buy it whole yourself, cleaning it (cutting away the valves and arteries and fat) is a lot of work. make your butcher do it. Mine used to have very few folks who bought it, so he would sell it to me for $1 a lb, if I bought in bulk. I'd freeze it.

Black soy beans. NOT black beans, or regular soy beans, but BLACK SOY BEANS. very high in protein and fiber, practically no usable carbs, and they cook up tasty and tender! No one will know the difference, and you have healthier beans.

Add a little cilantro... really perks up the flavor, so much so, you can use less salt.

Serving: in a bowl over lowcarb noodles (Dreamfields). Or serve with grated low-fat cheddar, chopped scallions, and a dollop of low-fat sour cream on top. Add some chopped jalapenos (fresh, not the pickled ones in a jar) for a little kick. or, all of the above.

That would be fun. I love cooking for entertaining. Made spaghetti and meatballs for 40 when I was up at the Star Trek New Voyages film shoot in upstate NY last month.

It's the Italian in me... it comes out in the kitchen... I can't help it.
