I want people to post Interesting meals their family is having "Tonight" no mac n' cheese with hot dogs here I know y'all have got some YUMMY recipes!

Also If you could- - Please-- Up in that title section up top write how far post-op you are so people can get an idea of what we are eating in the different stages.

Great thread idea!

Im 2 years post op...
Last night I made nachos for supper. (chips, g. meat, lettuce, tomatos, green onions, sour cream, and cheese)

Not good for the weight watch, but hey - it was yummy!

Me?
I cooked fried chicken tenders (in safflower oil, anybody else use that?)
creamed potatos
lima beans

and i ate everything. :D

Last night was...

Tilapia filets, covered with a can of small shrimp, fresh mushrooms, sliced garlic, fresh chopped basil, slivered yellow onion, salt/ pepper and butter spray. In the oven until tender.

Mixed greens salad with olive oil and red wine vinegar dressing.

Homemade scallopped potatoes.

For dessert, homemade Pumpkin pie.


I ate the fish and salad, rest was for Wifey and daughter.

mannn...can I start eating with you and your family Paul?? Its only me and a roommate at home, so i find myself not wanting to cook much unless it can be done in a microwave...so Im trying my best to be better....

I just love to cook. By making the food tasty and interesting, I find that I can be happier eating less... I just savor it more.

I don't always cook so nicely. Tonight we are having Chorizo with black beans and rice, and for a side (from my garden, of course) green beans, onion, sweet bananna peppers sauteed in olive oil, garlic and fresh basil.

I'll eat the meat and veggies, and a little of the rice (it is tasty).

Dessert is either more leftover pie, or I make sugar-free berry milkshakes... frozen mixed berries, skim milk, sugar-free icecream, vanilla and a little splenda... mixed up in the magic bullet.

Let me know when to expect you, I'll set out an extra plate. there's always leftovers to take home too!

BTW, i also pack my wife and daughter's lunches everyday... but I don't usually make them breakfast... hope that doesn't blow my image.

Paul can we clone you? My DH helps but doesn't like to cook at all. If he did we would have hot dogs every night or pizza. But I love dearly!!!

Ok for dinner last night:
Roasted Chicken (w/ rosemary, onion)
Steamed Green beans (from my MIL's garden) w/ veggie seasoning
Mashed Red Potates
Side Salad (mixed greens, cuc's, carrots, green onion, cherry tomatoes)

I made a curry to DIE for last weekend - took a leg of lamb, boned it, cubed the meat. Made a curry paste out of ginger, garlic, onion, cardamom, coriander, cumin, garam masala, did it the proper way with mortar and pestle, ground it all up, rubbed into the meat and marinated in the fridge for the day.

Then took another onion and the meat, browned off in a heavy pan, added tomato paste and some natural yogurt, and simmered until almost dry (too 1.5 hours, the meat produces its own liquid), then gradually add the rest of a cup of natural yogurt in batches, simmering to almost dry in between.

We had it with mango, raita, papadums and a bit of rice. OMG it was fantastic, the meat was so tender you could just cut it with a fork and it would flake off. Yummy. Made a big batch so froze half and we had it again mid week but without all the accompaniements.

Last night...

Pasta with seafood sauce. Dreamfields pasta. Suace was fresh garlic and basil, olive oil, I can't believe it's not butter, peeled and deveigned shrimp, sliced black and green olives, and a can of minced clams with juice. also a little white whine. Sauteed until the shrimp turn pink. Served with lowfat romano cheese sprinkled on top.
For a side, fresh green beans and sweet bananna peppers with garlic.
For dessert, homemade berry torte with sugar-free ice cream.

Yes, I am Italian... I love Garlic.

It's a aphrodesiac, you know!... hmmm maybe I should start using less garlic. I don't need the help!

seriously.....do you have any cousins, brothers, etc...anyone that would fall in the catagory for dating.....or just someone like you...where do we find gentlemen like that....any help would be appreciated!! :)
lucky lady.....i would even just settle for a friend that like to cook like that......

Hey, I'm not always good!!

Tonight is ham barbeque sandwiches. Thinly sliced ham cooked in sugar-free barbeque sauce, on hardrolls with provolone cheese.

Regular old salad on the side. and... I have no desserts planned, so it might just be cookies or Zebra cakes for the ladies. No fancy tonight!

Hey, when you're in the area... we always have an extra seat, and bring tupperware for the leftovers... I keep giving it out and never getting it back.

I have 3 male friends that are as great as my hubby, and still single. They do not go out too terribly much are are supposedly shy. One is 31, one is 25 and the other 22. They are such dears!

OMG Paul you cook too!

My DH's only flaw is that he doesn't and won't cook anything. I hate to cook myself, so meals are boring and now far and few between. I had dry cereal for the second night in a row for dinner. DH had a work dinner...probably something wonderful.

Dinner tonight was leftover roast and green beans from last night. Dessert a couple hours later was a bowl of SF Cherry Vanilla ice cream. OOOH and lunch I had one of those little cups of salmon that was Honey BBQ flavored and a little cup of cottage cheese. I would say that both lunch and dinner were about 4-6 ounce servings each. Trying to get back on track with measuring the food. But I royally screwed up and gave into my sweet tooth and had a Butterfinger. I know, I know....bad Kathy :tsk: Oh well, it isn't like I eat it everyday!
