Judybellyband's - BUTTER SQUASH, Kale and Chicken SOUP
INGREDIENTS
3-4 cup boiled, cubed **Chicken breast (about 3 whole breasts)
(boiled in salt/pepper/season and save the chicken broth)
1 tsp. extra virgin olive oil
1 butternut or winter squash (score the raw, hard squash first and microwave 4 minutes to remove skin and enable you to easily chop/dice the squash)
6 cup (lots of) uncooked kale choped in small pieces with center stalk removed
1 large stalk celery thinly diced
1 cup broccoli tops
1 cup diced onion or just add ½ cup of dried onions
1 package (2 cups) of finely sliced carrots
6-10 cups chicken broth (see above and/or add 1 can chicken broth for added richness if desired)

- Boil chicken until completely cooked and cut into 1/2" cubes
- Place the squash in microwave to pre-cook and then slice and dice into ½” inch cubes.
- Add ½ the squash, and all the kale, carrots, broccoli, onions and cubed chicken to the soup pot and cook over low heat.
- Meanwhile put half of squash cubes in a food processor or blender, puree and add to soup.
- Salt, pepper, and season to taste
- Cook about 1.5 to 2 hours allow to cool off some before serving

This makes a great meal served with a piece of fish and a salad.

**Chicken - to make taste better and TENDER for our bands, I have learned to soak any chicken in saltwater for 20 minutes and then drain before cooking. Also, deboned thighs are always the most tender parts of chicken. Try it and you SHALL thank-me.

LAYERED PUMPKIN PIE (SUGAR FREE)
CRUST:

1 box diabetic vanilla cookies
1/3 c. melted butter


PUMPKIN LAYER:

1 c. milk
2 sm. pkgs. vanilla sugar free instant pudding
1 sm. can pumpkin
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg

Finely crush cookies into crumbs and combine with melted butter. press onto bottom and sides of 9 inch pie pan. Chill.
Combine milk and pudding mix. Fold in pumpkin and spices until well combined. Spread over cream cheese layer. Chill for 3 hours. Garnish with dollops of remaining whipped cream. Sprinkle dollops lightly with nutmeg. Serves 6-8.

PUDDING PIE (SUGAR FREE) **** Delicious****
CRUST:

1 box diabetic vanilla cookies ( I use Joseph's Cookies Brand, the Almod Flavor but any flavor will do)
1/3 c. melted butter


FILLING:


1 c. milk
2 sm. pkgs. vanilla sugar free instant pudding (I love the chocolate pudding pie)



Finely crush cookies into crumbs and combine with melted butter. press onto bottom and sides of 9 inch pie pan. Chill.



Combine milk and pudding mix. Chill for 2 hours. Garnish with Cool Whip ( sugar free) . Serves 12 bandster portion sizes :) PS: If making with Vanilla SF pudding you can use diabetic vanilla cookies. And for topping you can wash and cut some straberries, boil them and mix splenda. That makes a very good straberry topping. Add Cool Whip ! YUM

8 oz Cream Cheese
½ cup Sugar
--- Beat together with mixer

Add:
1 pkg Unflavored Gelatin
½ cup hot water
--- Soften together

Add:
1 Can Crush Pineapple with Natural Juice
--- Fold in 8 oz Cool Whip

Put in bowl and chill 1 day ahead
Add cherries for decorating


NOTE: For a lower Sugar/low cal option use splenda and lite cream cheese.
-when using splenda, add just a little and taste to your liking since its really sweet.
